This tomato sauce made from fresh tomatoes from Provence, hand-picked and peeled by hand, and fresh onions, will be the perfect accompaniment to pasta, rice, meat and fish. It is all the more tasty as the onions are lightly fried in olive oil and are then added to the tomato to simmer as they would be at home. Not being acidic, this tomato sauce can be used without any heating to cover vegetable starters (peppers and courgettes with fresh tomato sauce makes a refreshing and mouth-watering starter).
