This oil has been produced from walnut kernels from southwestern France, mainly of two varieties: Franquette (delicate and fine in the mouth) and Granjean du Périgord Noir (marked walnut taste with a hint of bitterness) which gives an oil balanced between fruit and bitterness. Its flavour will be particularly valuable for enhancing winter salads (endives, etc.)
