Pesto avocado pasta
- 2 ripe avocados
- 1 bunch of fresh spinach
- 2 to 3 cloves of garlic
- 1 dash of lemon juice
- 1 pinch of espelette chilli pepper
– Remove the skin of the avocados and place all the ingredients in a mixing bowl.
– Mix until to get a smooth green sauce, add a sprinkle of water if required to have a sauce which is not too thick and runny.
– Check the seasoning.
– Keep it aside in room temperature.
– Cook your pasta al dente and serve them with pesto and enjoy!
